As a way to provide summertime entertainment (let’s face it in this economy, we’re not going on a vacation this year) and still provide the kids with a learning experience, we’ve decided to recreate each of the 67 recipes found in the June/July issue of Food Network magazine. I’m thinking of this as teaching the kids to eat outside of the box.

We’ll make the recipes taking notes on ease or difficulty. We’ll also comment on the taste and will take photos of each recipe to see if our final product looks anything remotely like the ones in the magazine. So go ahead, grab a Pineapple-orange Mimosa (page 130) and join us this summer.

As bad as the Fourth of July cocktail was (and trust me, it was bad) that’s how good this next recipe for the BLT Pasta Salad was.

My kids love bacon. Any kind of bacon. They’ll do tricks for a reward of bacon. I haven’t tried it but I’m pretty sure they’d even clean up their rooms for bacon.

They were very excited about the BLT Pasta Salad recipe (even though it included sour cream which is such a yummy food with such a lousy name). They started to slowly congregate to the kitchen once the bacon fumes started drifting through the house poking their heads into the easy making of the salad.

The recipe calls for corkscrew pasta that is mixed with (fresh, don’t you dare use that stuff in a jar) bacon bits, chopped tomatoes, and pieces of lettuce. It’s all held together with a lovely mayonnaise, sour cream dressing. Throw in a little chive and thyme and you’ve got a salad that acted as a main meal for the entire family.

The kids could not get enough of this stuff and actually fought over who got the remains (after everyone had had seconds).

Yummy BLT Pasta Salad is a BIG hit

Next time we make this (which will be soon) we’re going to make a double batch. The BLT Pasta Salad is one of the best recipes we’ve tried so far.
